Strawberry-Rhubarb Sauce


This is the time to be enjoying these delicious seasonal fruits. Rhubarb and strawberries are plentiful, and easy to turn into a delicious sauce. It’s great as a topping for fresh ice cream or anything else you can think of!

Yield: 3 cups


  • 2-1/2 cups chopped fresh or frozen rhubarb (1-inch pieces)
  • 1 Tbs. water
  • 1/2 cup honey
  • 1 cup sliced fresh or frozen unsweetened strawberries


  • In a saucepan, combine rhubarb and water, and cook over medium heat, stirring occasionally
  • As rhubarb softens, stir in the honey
  • Cook over medium heat until rhubarb is soft, about 20-25 minutes
  • Remove from the heat and stir in the strawberries
  • Serve over ice cream
