Rural Action Sustainable Agriculture recently released a new publication— “The Healthy Home Consumer Fresh Local Produce Guide.” Funded by the Sisters of St. Joseph Charitable Fund, the goal of the guide is to promote the use of local produce grown in Appalachia, improving the health of the community, and sustaining local farmers.
It includes information on selection, storage, and recipes for 40 different fruits and vegetables. Recipes such as pasta with broccoli, blueberry parfait, and spicy tacos are some of the simple, tasty recipes that make local food exciting. Paired with sample menu plans, descriptions of cooking techniques, a kitchen essentials guide, and a seasonal chart, the guide helps home cooks with any level of experience feel confident using local produce in their daily meals.
The guide will be distributed through programs that provide access to healthy local food in food deserts and other areas with limited healthy options. It will also be made available to purchase through www.ohiofoodshed.org and www.ruralaction.org . All proceeds will be used to continue the distribution of local foods into these areas.
